Satay Across the Archipelago, from Madura to Bali

Almost every region has its own signature satay with different spices and styles. Here are five you must try.

Satay Across the Archipelago, from Madura to Bali

Satay is one of Indonesia's most popular dishes. Pieces of meat are skewered, grilled over charcoal and served with sauces that vary from region to region.

Five satays to try

  • Sate Madura – chicken or goat with peanut sauce and sweet soy sauce, served with rice cakes.
  • Sate Padang – beef or offal with a thick spiced sauce thickened with rice flour.
  • Sate Lilit Bali – seasoned minced meat or fish mixed with grated coconut, wrapped around lemongrass or flat bamboo sticks.
  • Sate Maranggi – from Purwakarta, meat marinated in spices and soy sauce before grilling.
  • Sate Klathak – from Yogyakarta, simply seasoned goat meat skewered on iron spokes.

Satay-hunting tips

The best satay stalls usually get busy in the evening. Ask locals for recommendations and don't hesitate to try offal versions or spicier sauces.
